Sweet Garlic Pork

2 lbs pork chops
½ cup celery stalks, chopped
2 large onions, finely chopped
4 garlic cloves
1 cup cherry tomatoes
¼ cup soy sauce
3 tbsp butter
3 tbsp apple cider vinegar
1 tsp salt
2 tbsp stevia crystal
½ tsp ginger powder
½ tsp chili flakes
Rinse well the meat and pat dry each piece with some kitchen paper. Place on a large cutting board and remove the bones. Chop into bite-sized pieces and place in a deep bowl. Sprinkle with salt, ginger, and chili flakes. Drizzle with soy sauce and set aside.
Plug in the instant pot and press the ‘’Saute’’ button. Grease the inner pot with butter and heat up. Add onions, garlic, and celery stalks. Cook for 3-4 minutes, stirring constantly. Now add cherry tomatoes and sprinkle with stevia. Continue to cook for 5 minutes or until soft.
Finally, add the meat and drizzle with apple cider vinegar. Stir fry for another 4-5 minutes and then pour in one cup of water.
Press the ‘’Cancel’’ button and seal the lid. Set the steam release handle to the ‘’Sealing’’ position and press the ‘’Manual’’ button.
Set the timer for 10 minutes on high pressure.when done, release the pressure naturally and open the lid.
Optionally, sprinkle with freshly chopped parsley and serve immediately.
