Slowly Cooked Pork with Leeks
(Total Time: 8 HOURS| Serves: 6)
Ingredients:
2 lbs pork butt, chopped into smaller pieces
2 large leeks, chopped into 2-inch long pieces
1 cup cherry tomatoes, sliced
4 tbsp olive oil
1 green bell pepper, sliced
5 cups beef broth
Spices:
1 tsp salt
2 tsp cayenne pepper
½ tsp black pepper, freshly ground
3 bay leaves
Directions:
Combine the ingredients in the pot and seal the lid.
Set the steam release handle to the ‘’Sealing’’ position and press the ‘’Slow Cook’’ button.
Set the timer for 8 hours on low pressure.
When done, release the pressure naturally for 10-15 minutes and then move the pressure valve to release the remaining pressure.
Carefully open the lid and serve immediately.
Optionally, sprinkle with some Parmesan before serving.
