Simple Tomato Pork Chops
(Total Time: 40 MIN| Serves: 2)
Ingredients:
2 pork chops, with bones
1 cup cherry tomatoes
1 green bell pepper, sliced
1 small onion, finely chopped
4 tbsp olive oil
1 cup beef broth
Spices:
½ tsp salt
½ tsp white pepper, freshly ground
¼ tsp garlic powder
Directions:
Place the meat in the pot and season with salt. Pour in the broth and seal the lid. Set the steam release handle to the ‘’Sealing’’ position and press the ‘’Manual’’ button.
Set the timer for 15 minutes on high pressure. When done, release the pressure naturally and open the lid.
Remove the meat from the pot and transfer to a deep bowl. Set aside.
Now, press the ‘’Saute’’ button and grease the inner pot with olive oil. Heat up and add onions and peppers. Sprinkle with some more salt. Cook for 5-6 minutes and then add cherry tomatoes. Pour in about ¼ cup of the broth and simmer for 10-12 minutes, stirring occasionally.
Season with pepper and garlic powder. Optionally, add some red pepper flakes. Transfer the mixture to a food processor and process until smooth. Drizzle over pork chope and serve immediately.
