Dijon Pork with Turmeric
(Total Time: 30 MIN| Serves: 4)
1 lb pork neck, chopped into bite-sized pieces
1 large onion, sliced
1 cup heavy cream
2 tbsp Dijon mustard
4 tbsp olive oil
3 cups beef broth
1 tsp salt
½ tsp red pepper, freshly ground
2 tsp dried celery
Plug in the instant pot and press the ‘’Saute’’ button. Grease the inner pot with some oil and add onions. Sauté for 3-4 minutes and then add the meat. Continue to cook for another 5-6 minutes, stirring occasionally.
Season with salt, pepper, and celery and remove from the pot. Transfer to a deep bowl.
In a separate bowl, combine together heavy cream, Dijon mustard, and the remaining olive oil. Stir well and pour over the meat.
Place back to the pot and pour in the broth. Stir well and seal the lid.
Set the steam release handle to the ‘’Sealing’’ position and press the ‘’Manual’’ button. Set the timer for 15 minutes on high pressure.
When done, release the pressure naturally and open the lid. Serve immediately.
