2 lbs pork ribs, chopped
2 cups cherry tomatoes, whole
1 cup sun-dried tomatoes
1 large onion, finely chopped
4 tbsp butter
4 cups beef broth
3 tbsp stevia or swerve
1 tsp sea salt
1 tsp dried thyme
½ tsp dried oregano
½ tsp garlic powder
Plug in the instant pot and add ribs. Pour in the broth and seal the lid. Set the steam relsease handle and press the ‘’Manual’’ button.
Set the timer for 20 minutes on high pressure.
When done, release the pressure naturally and open the lid. Remove the meat along with the broth from the pot and press the ‘’Saute’’ button.
Grease the inner pot with butter and add onions. Sprinkle with some salt and cook until translucent.
Now add tomatoes and pour in 2 cups of broth. Sprinkle with the remaining spices and cook until tomatoes have softened. Stir occasionally.
When done, press the ‘’Cancel’’ button and add the meat. Coat well with the sauce and cover.
Let it sit for about 10 minute before serving.
