Easy Butter Chops
(Total Time: 35 MIN| Serves: 4)
4 pork chops, with bones
1 small onion, chopped
3 garlic cloves, crushed
1 tbsp tomato paste
2 tbsp Dijon mustard
1 cup vegetable stock
4 tbsp butter
3 tbsp almond flour
1 tsp salt
½ tsp black pepper, freshly ground
2 tsp smoked paprika
Plug in the instant pot and press the ‘’Saute’’ button. Grease the inner pot with butter and add onions. Sauté until translucent.
Now add garlic and continue to cook for another 1-2 mintues.
Finally, add chops, two at the time, and cook for 2-3 minutes on each side. Remove from the pot and place on a large platter. Brush each piece with Dijon mustard and sprinkle generously with salt, pepper, and paprika.
Place the meat back in the pot and pour in the stock. Stir in tomato paste and seal the lid.
Set the steam release handle to the ‘’Sealing’’ position and press the ‘’Manual’’ button.
Cook for 22 minutes on high pressure.
When done, release the pressure naturally and open the lid. Stir in the almond flour and let it sit, covered, for 10 minutes before serving.
