Almond Pork Meatball Stew

Ingredients:

3 lbs. minced pork

2 cups almond meal

1 cup vegetable broth

1 cup tomato passata

1 celeriac, cubed

1 onion, chopped roughly

2lbs collards, chopped roughly

4 eggs

1 tbsp. oil

Directions:

Mix the meat, almonds and eggs in a bowl.
Make the meat into balls.
Brown the meatballs all over in the oil in your Instant Pot.
Add the broth and sauce.
Cook on Stew 5 minutes.
Release the pressure slowly and add the vegetables.
Seal and cook on Sew a further 20 minutes.
