Keto Stewed Scotch Egg

Ingredients:
2lbs 20% fat pork mince, ground, salted and peppered
8 eggs
2 cups almond meal
2 cups tomato sauce
2 tbsp. coconut oil
1oz mixed herbs
dipping sauces
Directions:
Put the eggs into your Instant Pot and add water to cover, plus half an inch, if your limit allows.
Depending on your model of Instant Pot, either set to Eggs, or set to Stew and cook for 6 min.
Remove the eggs and put them in ice water.
As the eggs chill, split the mince down into 8 balls and flatten them out.
Combine the almonds, herbs, and half a tbsp. of coconut oil.
Once cool, peel the eggs.
Place one in each flattened sausage.
Roll the sausage into a ball around the egg.
Roll in almond meal and coconut oil mix.
Clear out your Instant Pot and add the remaining oil.
Leaving the top open, cook the eggs on high, rolling to ensure even browning.
Add the tomato sauce and simmer for 5 minutes.
