Taco Soup

1 lbs Ground Pork

1 lbs Ground Beef

16 oz Cream Cheese

20 oz Ro-Tel Diced Tomatoes and Green Chilies

2 tbsp. Taco Seasonings

4 cups Chicken Broth

2 tbsp. Coriander Leaves (chopped)

½ cup Monterey Jack (grated)


Set the Instant Pot to “Saute” and place in it the ground meats. Cook while frequently stirring and breaking larger chunks until all water has evaporated, some 10 minutes.
Add the cream cheese, Ro-Tel and taco seasonings, and stir well to combine.
Place and lock the lid and manually set cooking time to 15 minutes at high pressure.
When done quick release the pressure. Stir in the coriander leaves.
Serve topped with the grated Monterey Jack.
