    Spinach Walnut Patties

    (Total Time: 30 MIN| Serves: 6)

    Ingredients:

    1 lb fresh spinach, chopped

    1 cup walnuts

    ¼ cup almonds, ground

    ½ cup Provolone cheese

    4 large eggs

    3 tsp baking powder

    1 tbsp olive oil

    1 tbsp butter

    Spices:

    1 tsp salt

    ¼ tsp red pepper flakes

    ¼ tsp garlic powder

    ¼ tsp onion powder

    ¼ tsp turmeric powder

    Directions:

    In a food processor, place spinach, walnuts, olive oil, and all the spices. Process until all well incorporated. Transfer to a large bowl and whisk in the eggs, cheese, and baking powder. Whisk until fully combined and sticky.
    Now, form the patties with your hands and roll in the ground almonds. Repeat the process with the remaining mixture.
    Plug in the instant pot and press the ‘’Saute’’ button. Add butter and gently stir with a wooden spatula until melts.
    Carefully place the patties in the pot and cook for 5 minutes on each side, or until browned.
    Transfer to a serving plate and serve with Greek yogurt or sour cream.
