Ingredients:
2 cups spinach, chopped
1 cup cherry tomatoes, halved
1 medium-sized red bell pepper, chopped
1 medium-sized onion, chopped
2 tbsp Greek yogurt, full-fat
1 tbsp fresh chives, finely chopped
3 tbsp butter
¼ cup cottage cheese
Spices:
1 tsp smoked paprika, ground
1 tsp cayenne pepper, ground
1 tsp salt
½ tsp garlic powder
½ tsp black pepper, ground
Directions:
Place spinach in a large colander. Rinse thoroughly under cold running water and drain. Chop into small pieces and set aside.
Plug in your instant pot and press the ‘’Saute’’ button. Add butter and melt, stirring constantly with a wooden spatula.
Add spinach, leeks, tomatoes, bell pepper, and onions. Stir-fry for 5 minutes.
Sprinkle with smoked paprika, cayenne pepper, salt, garlic powder, and black pepper. Continue to cook for 5 more minutes.
Stir in the Greek yogurt and cook for about 2 more minutes.
Turn off the pot and transfer all to a serving plate. Top with cottage cheese and sprinkle with chives.
Serve immediately.
