3 cups spinach, finely chopped
1 cup kale, finely chopped
1 large leek, finely chopped
2 small onions, finely chopped
2 garlic cloves, crushed
4 tbsp olive oil
½ cup fresh goat’s cheese
½ cup Greek yogurt
2 tbsp Parmesan, freshly grated
½ tsp salt
½ tsp dried mint
Plug in the instant pot and press the ‘’Saute’’ button. Grease the inner pot with olive oil and heat up.
Add onions and leeks. Stir-fry for 3-4 minutes and then add garlic. Continue to cook for one minute.
Now add spinach and kale. Season with salt and mint and continue to cook until wilted.
Add goat’s cheese and half of the Greek yogurt. Give it a good stir and optionally season with more salt
Continue to cook for 3 minutes.
When done, press the ‘’Cancel’’ button and divide the mixture between serving plates. Sprinkle with some Parmesan and top with the remaining Greek yogurt.
