1 lb chicken breast, boneless and skinless
1 medium-sized onion, finely chopped
2 cups cream cheese
1 cup Greek yogurt
½ cup fresh parsley, finely chopped
3 tbsp. olive oil
1 tsp salt
½ tsp pepper
½ tsp garlic powder
½ tsp dried rosemary
Rinse the meat under cold running water and pat dry with some kitchen towel. Place on a clean work surface and chop into bite-sized pieces. Set aside.
Grease the stainless steel insert with some oil and press the ‘Saute’ mode. Add onions and stir-fry for 3 minutes. Add chopped meat and continue to cook for 10 minutes, stirring constantly.
Now add the remaining ingredients and seal the lid. Press the ‘Manual’ mode and set the timer for 40 minutes.
When you hear the cooker’s end signal, release the pressure naturally and open the lid.
Chill for a while and transfer to a food processor. Process until smooth and serve warm.
