    Chinese Pork Strips

    (Total Time: 55 MIN| Serves: 4)

    Ingredients:

    1 lb pork neck, cut into 2-inch long strips

    ½ cup canned bamboo, chopped

    1 spring onion, finely chopped

    1 egg

    3 tbsp vegetable oil

    2 red bell peppers, sliced into strips

    2 tbsp dark soy sauce

    2 tbsp light soy sauce

    1 tbsp rice vinegar

    Spices:

    ½ tsp salt

    ½ tsp stevia powder

    Directions:

    Rinse the meat and place on a large cutting board. Using a sharp knife, cut into strips and place in a deep bowl. Add one egg, salt, and soy sauce. Cover with a lid and set it sit for 10-15 minutes.
    Plug in the instant pot and press the ‘’Saute’’ button. Add half of the meat and cook for 6-7 minutes, stirring constantly. Repeat with the remaining meat and remove from the pot. Set aside.
    Now, grease the inner pot with oil and heat up. Add bamboo and sliced bell peppers. Cook for 7-8 minutes, stirring constantly.
    Sprinkle with stevia and rice vinegar and add the meat. Give it a good stir and add onions.
    Continue to cook for another 2-3 minutes.
    Press the ‘’Cancel’’ button and serve immediately.
