2 large tomatoes, chopped
3 tbsp peanut butter
¼ cup chicken stock
1 small onion, finely chopped
2 tbsp freshly chopped celery leaves
2 tbsp fish sauce
2 tbsp lemon juice, freshly squeezed
1 small chili pepper, finely chopped
1 garlic clove, crushed
2 tbsp olive oil
1 tsp ginger powder
2 tsp stevia powder
Grease the bottom of the stainless steel insert with olive oil and press the ‘’Saute’’ button. Add onions, garlic, and chili pepper. Give it a good stir and cook for 3-4 minutes.
Now add tomatoes and sauté until the liquid evaporates. Stir in the peanut butter, celery leaves, fish sauce, and lemon juice. Sprinkle with ginger powder and stevia powder. Stir well and cook for 1 minute.
Now pour in the chicken stock and bring it to a boil. Cook for 4-5 minutes.
Press the ‘’Cancel’’ button and transfer to a bowl. Chill for a while and serve.
