4 cups broccoli romanesco, chopped
1 garlic clove
3 tbsp olive oil
3 tbsp cream cheese
¼ cup milk
½ tsp pink Himalayan salt
¼ tsp garlic powder, optional
Rinse the broccoli under cold running water and place on a cutting board. Using a sharp knife, chop into florets and set aside.
Plug in the instant pot and press the ‘’Saute’’ button. Grease the inner pot with olive oil and add broccoli and garlic. Give it a good stir and cook for 6-7 minutes, stirring occasionally.
Now pour in about ½ cup of water and season with salt and some garlic powder to taste. Simmer until fork tender.
Press the ‘’Cancel’’ button and chill for a while. Transfer the mixture to a food processor and add cream cheese and milk.
Process until smooth adding more milk if necessary. Optionally, sprinkle with grated Parmesan cheese.
Goes great with baked chicken or grilled fish.
