1 cup cherry tomatoes, sliced
2 cups tomato sauce, sugar-free
1 tbsp tomato paste
2 tbsp chopped parsley, finely chopped
1 garlic clove, crushed
2 tbsp olive oil
1 small onion, finely chopped
2 tbsp apple cider vinegar
2 tsp sea salt
1 tsp dried oregano
¼ tsp black pepper
2 tbsp swerve
Place tomatoes, parsley, onions, garlic, and apple cider in a food processor. Process until smooth and set aside.
Plug in the instant pot and press the ‘’Saute’’ button. Heat up the oil and pour in the processed mixture. Add tomato paste and season with salt, oregano, pepper, and swerve.
Cook for 4-5 minutes.
Press the ‘’Cancel’’ button and remove from the pot. Serve immediately or store for later.
