1½ pounds grass-fed chicken wings
¼ cup sugar-free tomato puree
2-3 drops liquid stevia
1 tbsp. fresh lemon juice
Salt and freshly ground black pepper, to taste
In the bottom of Instant Pot, arrange a steamer trivet and pour 1 cup of water.
Place the pan on top of the trivet.
Place chicken wings on top of the trivet, standing vertically.
Secure the lid and place the pressure valve to “Seal” position.
Select “Manual” and cook under “High Pressure” for about 10 minutes.
Preheat the oven to broiler.
Select the “Cancel” and carefully do a Quick release.
Meanwhile, in a bowl, add remaining ingredients and beat until well combined.
Remove the lid and transfer chicken wings to the bowl of sauce.
Coat the wings with sauce generously.
Arrange the chicken wings onto a parchment paper lined baking sheet and broil for about 5 minutes.
Serve hot with remaining sauce.
