Pool-Party Meatballs

    1½ pounds grass-fed ground beef

    ½ cup finely chopped bacon

    ½ cup almond flour

    1 tsp garlic powder

    ½ tsp parsley flakes

    Salt and freshly ground black pepper, to taste

    1½ cups sugar-free ketchup

    ½ cup sugar-free steak sauce

    2 cups filtered water

    ¼ cup shredded Parmesan cheese


    In a large bowl, add all ingredients except ketchup, steak sauce, water and cheese and mix until well combined.
    Make equal sized meatballs from the mixture.
    In another bowl, add ketchup, steak sauce and water and mix well.
    In the bottom of Instant Pot, place meatballs and top with ketchup mixture.
    Secure the lid and place the pressure valve to “Seal” position.
    Select “Manual” and cook under “High Pressure” for about 5 minutes.
    Select the “Cancel” and carefully do a Quick release.
    Remove the lid and immediately, sprinkle with cheese.
    Serve immediately.
