Chocolate Cream

2 heavy cream

¼ cup unsweetened dark chocolate, chopped

3 eggs

1 tsp orange zest

1 tsp stevia powder

1 tsp vanilla extract

½ tsp salt


Plug in your instant pot and press the ‘Saute’ button. Add heavy cream, chopped chocolate, stevia powder, vanilla extract, orange zest, and salt. Stir well and simmer until the chocolate has completely melted. Press the ‘Cancel’ button and crack eggs, one at the time, stirring constantly. Remove from the instant pot.
Transfer the mixture to 4 mason jars with loose lids.
Pour 2 cups of water in your instant pot and set the trivet in the stainless steel insert. Add jars and seal the lid.
Set the steam release handle and press the ‘Manual’ button. Set the timer for 10 minutes.
When done, perform a quick release by moving the steam valve to the ‘Venting’ position.
Open the lid and remove the jars. Chill to a room temperature and then transfer to the refrigerator.
Top with some whipped cream before serving.
