    Make-Ahead Freezer Meatballs

    MAKES: 16 servings (64 medium meatballs)
    PREPARATION TIME: 25 minutes
    I love the convenience of these simple, all-purpose meatballs. They take just a few minutes to make, and they can go straight from the freezer into a hearty stove-top sauce for a no-fuss, low-carb meal.

    Ingredients
    4.4 pounds (2 kg) ground beef
    1 medium (110 g/3.9 oz) onion, finely chopped
    4 cloves garlic, crushed
    1/4 cup (15 g/0.5 oz) freshly chopped herbs of choice (parsley, basil, oregano, cilantro, etc.), or 1 tablespoon dried herbs
    11/2 teaspoons fine sea salt
    1/2 teaspoon black pepper
    Optional: 1 cup (90 g/3.2 oz) grated Parmesan cheese

    Instructions

    Place all the ingredients in a bowl and combine well. Using your hands, create 64 medium-sized meatballs (about 34 g/1.2 oz each).
    Place the meatballs on a tray or baking sheet in a single layer and freeze for 11/2 to 2 hours. Place the meatballs in a bag and store in the freezer for up to 3 months. When ready to be used in a recipe, place the required amount of meatballs in the fridge to defrost overnight. Alternatively, add frozen meatballs directly to sauces and cook on the stove (see Quick Meatball Casserole).
    TIP: Make your own meatballs or patties (flattened meatballs) using any ground meat (beef, pork, lamb, chicken, turkey, etc.), and mix it with your favorite herbs and spices such as parsley, basil, oregano, cilantro, paprika, cumin, coriander, or chile flakes. You can even add 1 to 2 tablespoons (15 to 30 g) of Red Pesto!
