● Large eggs (3)
● Monk fruit – 30% extract (.25 tsp.)
● Stevia powder extract (.25 tsp.)
● Vanilla extract (1 tsp.)
● Coconut oil (.25 cup)
● Banana extract (2 tsp.)
● Baking powder (1 tsp.)
● Coconut flour (.25 cup)
● Almond flour (.75 cup)

● Mashed avocado (1 medium)

Preparation Method
- Leave the eggs out to become room temperature.
- Warm up the oven to 350° Fahrenheit.
- Generously grease the muffin tin.
- Whisk the coconut oil with stevia and monk fruit.
- Whisk in the eggs and mix with the vanilla and banana extracts.
- In another container, sift or whisk the coconut flour, baking powder, cinnamon, salt, and almond flour.
- Blend into the coconut oil mixture and the mashed avocado.
- Fold in the nuts, reserving two tablespoons to sprinkle on top.
- Empty the batter into the molds and garnish with the nuts.
- Bake for approximately 25 to 30 minutes.
