Preparation Method
- Warm the oven to 400º Fahrenheit.
- Lightly grease 16 muffin tins. Whisk the butter and erythritol together until creamy.
- Break the eggs in one at a time. Add the lemon juice, zest, milk, and vanilla extract. Stir in the baking powder, sifted flour, and flaked coconut.
