SLOW COOKER SIZE: MEDIUM

1 tablespoon olive oil
3 cups cauliflower florets
3 cups broccoli florets
½ cup chopped onion
1 teaspoon dried Italian seasoning
½ teaspoon salt
¼ teaspoon ground black pepper
1 cup heavy whipping cream
2 cups shredded Swiss or Gruyère cheese
4 slices sugar-free bacon, cooked until crisp and crumbled
1.Rub the sides and bottom of the stoneware with the olive oil.
2.Add the cauliflower, broccoli, onion, Italian seasoning, salt, and pepper to the slow cooker and stir to combine. And the cream and 1½ cups of the cheese. Stir to combine. Cover and cook on Low for 5 to 6 hours. Sprinkle with the remaining ½ cup cheese and the bacon. Serve warm.
