1 cup chicken broth
1 teaspoon dried minced garlic
6 cups cauliflower florets
4 tablespoons butter, softened
½ cup full-fat sour cream
½ teaspoon salt
¼ teaspoon ground black pepper
3 tablespoons minced fresh flat-leaf (Italian) parsley
1.Place the chicken broth and garlic in the slow cooker. Stir to combine. Add the cauliflower florets. Cover and cook on Low for 4 to 5 hours or on High for 2 to 3 hours.
2.Pour into a large mixing bowl. Use an immersion blender or a hand mixer to mash. Stir in the butter, sour cream, salt, and pepper. Taste and adjust seasoning, if necessary. Sprinkle with parsley before serving warm.
