    Balsamic Beef

    This recipe comes together in just minutes, making it possible to serve home-cooked roast beef any time you want! The radishes add a great peppery kick to the dish.
    SLOW COOKER SIZE: MEDIUM

    4 tablespoons olive oil
    1 medium onion, sliced
    6 whole radishes, 1 to
    1½ inches in diameter, trimmed
    1 boneless beef chuck roast (about 2½ pounds)
    3 tablespoons balsamic vinegar
    1 tablespoon dried Italian seasoning
    2 teaspoons dried minced garlic
    1 teaspoon salt
    1 teaspoon ground black pepper
    ½ cup beef broth
    1.Rub the sides and bottom of the stoneware with 2 tablespoons of the olive oil. Place the onion and radishes in the slow cooker.
    2.Rub the beef on all sides with the remaining 2 tablespoons olive oil. Place the meat in the slow cooker on top of the onions and radishes. Brush the top and sides of the roast with the vinegar. Season with the Italian seasoning, garlic, salt, and pepper. Pour the broth over all.
    3.Cover and cook on Low for 6 to 8 hours, or until the meat is tender.
