Tomato Pesto Roast Beef

On days when time is short, this is your go-to mealtime solution. It takes about five minutes to prepare this recipe for the slow cooker. Dinner will be ready by evening, and you will have spent minimal effort to create a delicious meal.

1 tablespoon olive oil
½ cup diced onion
1 boneless beef chuck roast (about 2 pounds)
½ cup basil pesto
1 (14.5-ounce) can Italian-style diced tomatoes, not drained
1.Rub the sides and bottom of the stoneware with the olive oil. Sprinkle the diced onion into the slow cooker. Place the roast on the onion. Spread the pesto over the top of the roast. Pour the tomatoes around the roast.
2.Cover and cook on Low for 6 to 8 hours, or until the meat is tender.
