There are perhaps as many recipes for barbecue sauce as there are people who enjoy barbecue. This recipe makes a richly flavored tomato-based sauce that tastes just a little sweet and spicy. To use the sauce, brush it over smoked or grilled meat toward the end of the cooking period. Or, serve it as a warm dip with pieces of grilled steak, sausages, or ribs.
SLOW COOKER SIZE: SMALL
2 tablespoons avocado oil
8 tablespoons butter
1 (14.5-ounce) can petite diced tomatoes, not drained
2 (6-ounce) cans tomato paste
⅔ cup apple cider vinegar
1½ tablespoons granulated erythritol sweetener
4 teaspoons chili powder
4 teaspoons smoked paprika (see Tip, this page)
4 teaspoons mustard powder
1 tablespoon dried minced garlic
1 teaspoon salt
1 teaspoon celery seeds
1 teaspoon onion powder
½ teaspoon ground black pepper
¼ teaspoon hot sauce
½ cup chicken broth
1.Rub the sides and bottom of the stoneware with the avocado oil.
2.Place the butter in the slow cooker. Add the remaining ingredients and stir to blend. Cover and cook on Low for 2½ to 3½ hours.
3.Carefully, use an immersion blender to puree the mixture until nearly smooth (see Tip, this page).
