    GUACAMOLE

    Yield: about 3 cups (½ cup per serving) Prep time: 4 minutes

    3 avocados, peeled, halved, and pitted

    ½ cup diced onions

    2 cloves garlic, crushed to a paste

    2 plum tomatoes, diced

    3 to 4 tablespoons lime juice

    3 tablespoons chopped fresh cilantro leaves

    1 teaspoon fine sea salt

    ½ teaspoon ground cumin

    1. Place the avocados in a large bowl and mash with a fork to the desired consistency.
    2. Add the onions, garlic, tomatoes, 3 tablespoons of the lime juice, cilantro, salt, and cumin. Stir until well combined. Taste and add up to 1 tablespoon more lime juice, if desired.
    3. Cover tightly and refrigerate for 1 hour for the best flavor, or serve immediately.
