These lemony tarts are all you need to fulfill your dessert cravings.
Ingredients Required:
1/3 cup lemon juice
2/3 cup raspberries
1 cup coconut milk
2 Teaspoon lemon rind
6 eggs
1 cup walnuts
1½ cups almonds
1½ cup dates
Method:
In a food processor, combine the almonds, walnuts, and dates till you have a coarse texture. Line the tart pan with baking paper. Press the pastry along the bottom and the sides and refrigerate. For the filling, take a pan, add in the lemon juice, coconut milk, lemon rind and honey and simmer it on a low flame for 2 minutes. Slowly add in the beaten eggs to the mixture. Stir vigorously till it forms a nice smooth texture. Add in some more honey if needed. Leave it to cool. Remove the pastry case and pour the lemon filling slowly into the pastry case. Bake it at 180 Degrees Celsius for 30 minutes. Top it with strawberries while serving.
