The mango salsa adds a nice sweet and tangy touch to the chicken. Makes for a delicious recipe and can be made as a family meal on weekends too.
Ingredients Required
2 Mangoes
1 Bell Pepper
1 Medium Red Onion
1 Tspn Paprika
½ Cabbage Chopped
½ Cup Freshly squeezed Orange Juice
4 Whole Chicken Legs or Breast or Your choice of cut
2 Tbspn Ghee
Salt and Pepper to taste
Ginger-Garlic Paste
1 Tbspn Balsamic Vinegar
Method
Marinate the chicken with balsamic vinegar, ginger-garlic paste, salt, pepper and paprika. Keep in the fridge for 30 minutes. Chop the mangoes, onion, cabbage and bell pepper. To this, add some salt and pepper and the orange juice. Mix well and store in fridge until you are ready to use it. Heat a pan with the ghee. Once hot, add the chicken, leaving it to cook for 4-5 minutes per side. You can baste the chicken with the
