As the name suggests….
Ingredients:
• About 1.5 tablespoon olive oil
• 2 cups beef stock
• 1 medium zucchini, spiraled
• 1 small onion (Diced)
• 11/2 teaspoons sea salt
• 1 medium tomato (Diced)
• 1 carrot (Chopped)
• 1/2 teaspoon black pepper
• 2 pounds ground beef
• 2 ribs celery (Chopped)
• 4 cups water
• 1/2 cup parmesan cheese (Shredded)
• 1 large egg
• About 1/2 cup fresh parsley
• 6 cloves garlic (Crushed)
• 1 teaspoon Italian seasoning
• 1 teaspoon dried oregano
Directions:
- First of all, please make sure you have all the ingredients available. Add the beef stock, water, tomato, zucchini, onion, carrot and celery to the crock pot.
- Now cover & simmer for about 10 to 15 minutes.
- To a large mixing bowl, please add the ground beef, parmesan cheese, garlic, egg, parsley, Italian seasoning, oregano, pepper and salt.
- This step is important. Then mix until well combined. Form into 1-inch balls.
- In a medium or large skillet, please heat the olive oil over medium-high heat.
- Now add the meatballs & cook properly until all sides are brown. (No need to cook through, as they will be going into the crock pot.)
- Now add the meatballs to crock pot.
- One thing remains to be done now. Then cover & cook properly for about 6 to 7 hours.
- Finally serve hot.
