    Best Beef Soup With Zucchini Noodles

    As the name suggests….

    Ingredients:

    • About 1.5 tablespoon olive oil

    • 2 cups beef stock

    • 1 medium zucchini, spiraled

    • 1 small onion (Diced)

    • 11/2 teaspoons sea salt

    • 1 medium tomato (Diced)

    • 1 carrot (Chopped)

    • 1/2 teaspoon black pepper

    • 2 pounds ground beef

    • 2 ribs celery (Chopped)

    • 4 cups water

    • 1/2 cup parmesan cheese (Shredded)

    • 1 large egg

    • About 1/2 cup fresh parsley

    • 6 cloves garlic (Crushed)

    • 1 teaspoon Italian seasoning

    • 1 teaspoon dried oregano

    Directions:

    1. First of all, please make sure you have all the ingredients available. Add the beef stock, water, tomato, zucchini, onion, carrot and celery to the crock pot.
    2. Now cover & simmer for about 10 to 15 minutes.
    3. To a large mixing bowl, please add the ground beef, parmesan cheese, garlic, egg, parsley, Italian seasoning, oregano, pepper and salt.
    4. This step is important. Then mix until well combined. Form into 1-inch balls.
    5. In a medium or large skillet, please heat the olive oil over medium-high heat.
    6. Now add the meatballs & cook properly until all sides are brown. (No need to cook through, as they will be going into the crock pot.)
    7. Now add the meatballs to crock pot.
    8. One thing remains to be done now. Then cover & cook properly for about 6 to 7 hours.
    9. Finally serve hot.

    Servings: 10 to 12
