9 g European-style butter
34 g 40% heavy cream
60 g raw egg, mixed well
13 g walnut oil
1.6 g Truvia™, calorie-free sweetener
8 g fresh blackberries, sliced
After measuring all ingredients on a gram scale, preheat oven to 350°F. In a wide, shallow tart dish, melt the butter in the microwave. Coat the dish with the butter. Mix the cream, egg, walnut oil, sweetener, and vanilla very well. Pour the mixture into the dish; do not fill more than one-third full, as the egg mixture will puff in the oven and you do not want the ingredients to overflow. Place the blackberry pieces on top of the egg mixture. Bake for about 15 minutes until cooked thoroughly. Let the calflutti cool for a few minutes and serve warm.
