This is a very fun special-event or weekend meal. Pizza in the morning is an unexpected treat that makes kids happy!
39 g egg whites, raw, beaten stiff
18 g egg yolk, raw
17 g canola oil
3.5 g calorie-free sweetener, Truvia
20 g 40% heavy cream, whipped
10 g European-style butter
6 g cream cheese, Philadelphia brand
7 g strawberries, minced
5 g blackberries, minced
3–5 drops of vanilla flavor, Bickford
After measuring all ingredients on a gram scale, preheat the oven to 350°F. Fold the egg yolk, walnut oil, and half of the Truvia™ into the egg whites. Pour onto a lightly greased silicone- or parchment-lined baking sheet. Bake for 20–25 minutes until cooked thoroughly. While the crust is cooking, mix the cream cheese, butter, and vanilla until it is very smooth. Fold the remaining Truvia™ and whipped cream into the cream cheese mixture.
Assemble the pizza by spreading the cream cheese mixture onto the cooked crust. make sure the bowl is scraped very well. then evenly spread the chopped fruit on top.
Notes: The “crust” will hold all of the oil, but if a lighter and fluffier texture is preferred, serve some of the oil on the side.
