    Warm Flaxmeal Cereal and Fried Egg White

    If you are having trouble getting enough fiber while on the ketogenic diet, this warming cereal is the way to go! This is served with an egg white; you could also add fruit for a lower ratio. This recipe makes a large serving of cereal.

    21 g flaxseed meal, Bob’s Red Mill

    10 g European-style butter

    5 g coconut oil

    3–5 drops of vanilla flavor, Bickford

    45 g 40% heavy cream

    33 g egg white, raw

    0.1 g cinnamon

    pinch of salt

    Measure the cream, flaxseed meal, and butter in a microwavable bowl. Microwave in 30-second intervals, stirring very well each time. The cereal only needs to be warmed through to thicken. It can be made very thick, similar in consistency to oatmeal; more water can be added to thin it to desired consistency. Add the cinnamon, vanilla flavor, and salt; stir to combine.

    Melt the coconut oil in a small nonstick frying pan over medium-low heat. Fry the egg white in the coconut oil until cooked through. Place the egg white on a serving plate and scrape all of the remaining fat out of the pan onto the egg white.

    Dietitian’s Corner: Flax seeds contain large amounts of polyunsaturated fatty acids, which help lower blood cholesterol levels.

    Eating excessive amounts of flax seeds or flax seed oil can lead to thinning of the blood. We do not recommend that you consume this recipe on a daily basis and to have your blood tested by your physician if you are consuming these products frequently and in large amounts.
