    Fruit Smoothie and Bacon

    Smoothies taste great and hide oil very well. There is also the added benefit of the smoothie “bulking up” the size of the meal. If you prefer not to serve bacon, an egg would be a great alternative.

    49 g 40% heavy cream

    75 g almond milk, Blue Diamond brand, unsweetened vanilla flavor

    10 g walnut oil

    5 g frozen blueberries, unsweetened

    2 g calorie-free sweetener, Truvia

    18.5 g bacon, Smithfield brand, no sugar added, cooked

    After measuring all ingredients on a gram scale, combine the heavy cream, almond milk, walnut oil, blueberries, and Truvia in a small blender cup and process until the blueberries are completely pureed. Scrape the blender blades very well and serve in the same cup along with the cooked bacon.

    Notes: Use any type of unsweetened frozen fruit or fresh fruit.

    Magic Bullet-style blenders work the best for small smoothies because you can use the blender cup to drink from, minimizing food loss that happens with a larger blender. An immersion blender will also work well.
