The breading is omitted from the fish sticks, but this also allows room to serve apple sauce as a flavoring for the oil. Although there is more oil than apple sauce, the oil is flavored enough by the apple sauce that most kids do not mind eating it this way.
44 g Mahi Mahi, raw
20 g mayonnaise, Hellman’s
5 g dill relish, bubbies
20 g canola oil
18 g applesauce, Mott’s Natural, no sugar added
Measure all ingredients on a gram scale. Slice the fish into “stick” shapes. Spray a nonstick frying pan with spray oil. Lightly fry the fish over medium-low heat until it is cooked thoroughly. Remove the fish to a serving plate. Mix the mayonnaise and relish together and serve with the fish as a dipping sauce. Blend the applesauce and the oil together very well. This may take a minute, but it will hold together once it has been very well blended. Serve immediately.
