Beef and Spaghetti Squash in Alfredo

    This meal comes together in a flash with ingredients that have been cooked in advance. All that is needed is to heat it in the microwave and you have a warm, cheesy meal with kid-pleasing flavors.

    30 g 40% heavy cream

    15 g spaghetti squash, cooked

    19 g 85% lean ground beef, cooked

    13.5 g mayonnaise, Hellmann’s

    6 g Parmesan cheese, block style, grated

    13 g olive oil

    Optional: salt/pepper, pinch of dried parsley flakes

    After measuring all ingredients on a gram scale, combine the heavy cream, squash, beef, mayonnaise, cheese, and 3 grams of the olive oil together in a microwavable bowl. Heat on high for about 30 seconds, and then stir and heat in 30-second intervals until the sauce has thickened. Serve the 10 additional grams of oil in a medicine syringe.
