Jell-O-flavored puffs are a great snack to bring anywhere on the go. They are a nongreasy, snackable treat that is very easy to eat even for very young children.

15.6 g egg whites, whipped into stiff peaks

13 g pecans, ground very fine

6g walnut oil

0.5 g sugar-free Jell-O powder

After measuring all ingredients, fold the pecans, walnut oil, and Jell-O® into the egg whites. Mix just enough to combine the ingredients. Do not over mix, so not to lose the volume of the egg whites.

Scrape the mixture into a small resealable sandwich baggie. Press the air out of the bag and seal. Snip the bottom corner off of one side of the bag creating an opening about 1/4 of an inch. Pipe “dime”-sized mounds of the batter onto a parchment- or silicone-lined baking sheet and bake in a 300°F oven for about 10–12 minutes or until they are dry all the way through. If they begin to brown, turn the oven heat down. Allow to cool on the baking sheet and store in an air-tight container.
