Brazil nuts are a plentiful natural source of selenium, but not usually a favorite of most kids. This cookie version creates a delicious, crunchy cookie that kids will look forward to eating!
18 g Brazil nuts, ground fine
3.7 g coconut oil
3g egg whites
0.5 g calorie-free sweetener, Truvia
0.2 g cinnamon
Optional: 3–5 drops of vanilla flavor, Bickford, pinch of salt
After measuring all ingredients, mix together all the ingredients very well. Divide the nut mixture into 4–5 equal portions. Roll into small ball shapes and flatten with a fork, or press into an oven-safe silicone candy mold shape. Bake in a 350°F oven for 15 minutes.
