    Pumpkin Bread

    If you’re a pumpkin lover and missing all the Halloween pumpkin treats, you’re going to love this loaf. Each serving acts like a delicious little protein bar.

    Serves 10

    Ingredients

    1½ cups almond flour

    3 egg whites

    ¼ cup granulated sugar

    ½ cup coconut milk

    ¼ cup psyllium husk powder

    1½ tsp. pumpkin pie spice

    2 tsp. baking powder

    ½ tsp. salt

    Directions

    1. In a bowl, sift all the dry ingredients. Place a container with 1 cup of water into a preheated oven (350°F).
    2. Add the pumpkin and coconut milk to the dry ingredients, and mix.
    3. Whisk the egg whites, and add them into the dough, folding carefully.
    4. Place the dough into a greased loaf pan, and cook the bread for 75 minutes.
