Ingredients
4 cup fresh spinach
4 eggs
½ cup cheddar cheese
1 tbsp. heavy cream
1 tbsp. olive oil
Salt and pepper
Directions
- In a bowl, mix together the eggs, heavy cream, salt and pepper.
- Heat a large pan, and add the olive oil and spinach when the oil is heated.
- Stir the spinach, and add the salt and pepper.
- Once the spinach is fairly wilted, add the egg mixture and turn to medium heat.
- When the eggs are set, add the cheese and stir slowly until it melts.
