    Brownie Muffins for Ketoheads

    These muffins look like chocolate but they aren’t! And why is that a good thing? Because you can eat them shamelessly. Made with wholesome ingredients, they are perfect for an everyday breakfast.

    Serves 6

    Ingredients

    1 cup golden flaxseed meal

    1 tbsp. cinnamon

    ¼ cup cocoa powder

    ½ tsp. salt

    ½ tsp. baking powder

    1 egg

    2 tbsp. coconut oil

    ¼ cup sugar-free caramel syrup

    ½ cup pumpkin purée

    1 tbsp. vanilla extract

    1 tbsp. apple cider vinegar

    ¼ cup slivered almonds

    Directions

    1. Preheat oven to 350°F.
    2. Place all the ingredients except the almonds into a large mixing bowl, and combine well.
    3. In a lined muffin pan, fill each space, dividing the batter into 6 parts.
    4. Sprinkle the almonds on top.
    5. Bake for around 15 minutes.
