    Keto Banana Pancake

    This one’s for the whole family. It’s just as delicious in the morning as it is post-workout.

    Serving Size 4

    Ingredients

    2 eggs

    1 banana

    2 tbsp. cashew nuts, ground

    ¼ tsp. cinnamon

    ¼ tsp. ground cloves

    1 tbsp. extra virgin coconut oil

    For the Topping:

    3 tbsp. coconut cream

    ¼ tsp. cinnamon

    Directions

    1. Whisk the eggs in a small bowl.
    2. In another bowl, mash the bananas with cinnamon, ground cashew nuts and ground cloves. Add the eggs to the mixture and combine well.
    3. Grease a pan, heat, and make the pancakes by pouring enough batter to make a hand-size pancake. Flip when the edges are browned and the top begins to bubble.
    4. When cooked, remove and top with the coconut cream and cinnamon.
