Ingredients
2 eggs
1 banana
2 tbsp. cashew nuts, ground
¼ tsp. cinnamon
¼ tsp. ground cloves
1 tbsp. extra virgin coconut oil
For the Topping:
3 tbsp. coconut cream
¼ tsp. cinnamon
Directions
- Whisk the eggs in a small bowl.
- In another bowl, mash the bananas with cinnamon, ground cashew nuts and ground cloves. Add the eggs to the mixture and combine well.
- Grease a pan, heat, and make the pancakes by pouring enough batter to make a hand-size pancake. Flip when the edges are browned and the top begins to bubble.
- When cooked, remove and top with the coconut cream and cinnamon.
