Ingredients
For the Chicken & Egg:
2 chicken thighs, boneless
½ tsp. curry powder
¼ tsp. turmeric powder
½ tsp. lime juice
½ tbsp. coconut oil
1 egg
A pinch of salt
For the Nasi Lemak:
3 tbsp. coconut milk
3 slices ginger
½ small shallot
1 cup riced cauliflower
4 slices cucumber

Directions
- Rice the cauliflower and strain the water.
- Prepare the curry powder, turmeric powder, lemon juice and salt, and marinate the chicken thighs for an hour or two in the fridge. Remove and fry.
- Boil the coconut milk, ginger and shallot in a saucepan. When it bubbles, incorporate the cauliflower rice and mix.
- Serve with the marinated fried chicken and fried egg.
