Original Nasi Lemak

A food with Indonesian origin, this dish will crown your lunch. It may seem complicated, but it’s not too hard; and it will impress, so invite a friend to join you!

Serves 2


For the Chicken & Egg:

2 chicken thighs, boneless

½ tsp. curry powder

¼ tsp. turmeric powder

½ tsp. lime juice

½ tbsp. coconut oil

1 egg

A pinch of salt

For the Nasi Lemak:

3 tbsp. coconut milk

3 slices ginger

½ small shallot

1 cup riced cauliflower

4 slices cucumber



  1. Rice the cauliflower and strain the water.
  2. Prepare the curry powder, turmeric powder, lemon juice and salt, and marinate the chicken thighs for an hour or two in the fridge. Remove and fry.
  3. Boil the coconut milk, ginger and shallot in a saucepan. When it bubbles, incorporate the cauliflower rice and mix.
  4. Serve with the marinated fried chicken and fried egg.
