Ingredients
2 tbsp. butter, unsalted
2 onions
1 pepper
8 chicken thighs (boneless)
8 slices of bacon
1 tsp. thyme
1 tsp. salt
1 tsp. pepper
1 tbsp. garlic, minced
1 tbsp. coconut flour
3 tbsp. lemon juice
1 cup chicken stock
¼ cup unsweetened coconut milk
3 tbsp. tomato paste
Directions
- Place the butter in the center of the Crock-Pot.
- Slice the onion and pepper, and add to the Crock-Pot. Then add the chicken thighs. Top with the bacon slices.
- Season with salt, pepper, minced garlic, and coconut flour. Add the lemon juice, chicken stocks, coconut milk and tomato paste.
- Cook on low for 6 hours. When it is done, stir and serve.
