Chili Soup

Use your crockpot to make this yummy soup, perfect for a chilly day. Get it? Good.

Serves 8


2 tbsp. butter, unsalted

2 onions

1 pepper

8 chicken thighs (boneless)

8 slices of bacon

1 tsp. thyme

1 tsp. salt

1 tsp. pepper

1 tbsp. garlic, minced

1 tbsp. coconut flour

3 tbsp. lemon juice

1 cup chicken stock

¼ cup unsweetened coconut milk

3 tbsp. tomato paste


  1. Place the butter in the center of the Crock-Pot.
  2. Slice the onion and pepper, and add to the Crock-Pot. Then add the chicken thighs. Top with the bacon slices.
  3. Season with salt, pepper, minced garlic, and coconut flour. Add the lemon juice, chicken stocks, coconut milk and tomato paste.
  4. Cook on low for 6 hours. When it is done, stir and serve.
