This one has to be tried to be believed. It serves up to 6 and the mixture of goat’s cheese, mint and dill give it a totally unique twist.
6 oz. soft goat’s cheese
1 tbsp. dried mint
1 tsp. dried dill
Salt and pepper
- Cut off the ends of the zucchini. Slice into⅛-inch slices and brush with oil. Grill on both sides.
- Mix together the goat’s cheese, mint and dill. Divide into 6 pieces.
- Wrap the cheese pieces with the zucchini slices and secure with a toothpick.
